Ingredients list for Vanjaram Vepudu
- 8 slices Surmai (king fish)
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Red chilli powder
- 1/2 teaspoon Cumin
- 2 teaspoons Coriander powder
- 1 1/2 teaspoons Ginger-garlic paste
- 2 teaspoons Lemon juice
- to taste Salt
- 2 teaspoon Oil
- 12-16 Curry leaves
Method
- Combine turmeric powder, red chilli powder, roasted cumin powder, coriander powder, ginger-garlic paste, lemon juice, salt and 2 tsps oil in a bowl. Chop 4-6 curry leaves and mix. Apply this mixture to the fish pieces and keep them in a refrigerator to marinate for 10 minutes.
- Heat sufficient oil in a non-stick pan. Keep the fish pieces in it in a single layer. Shallow fry, turning sides, a few times to ensure even cooking. Add the remaining curry leaves and cook till both sides of the fish are golden and crisp. Drain on absorbent paper and serve hot.
