Remove from heat, add the milk, sugar, salt and egg and mix well. Add the yeast and set aside for ten to fifteen minutes. Take the flour in a bowl. Add the milk mixture and sufficient water and knead into a soft dough. Cover with a damp muslin cloth and set aside for fifteen to twenty minutes. Transfer the dough on the worktop and knock back to release the excess air. Cover with a damp muslin cloth and set aside for fifteen to twenty minutes. Heat sufficient oil in a pan. Divide the dough into eight equal portions, shape them into balls, roll out into thin cylinders and twist and press both ends to shape like a donut. Deep-fry the donuts in hot oil till golden and crisp. Drain on absorbent paper. Take cinnamon powder in another bowl. Add the castor sugar and mix well. Sprinkle the cinnamon-sugar mixture on top of the donuts.
