Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Tomato Phirni Recipe

  • Tomatoes 2 medium

  • Rice 5 tablespoons

  • Milk 1 litre

  • Pistachios 10-15

  • Sugar 1 cup

  • Cloves 2

  • Cinnamon` 1/2 inch stick

  • Green cardamom powder 1/2 teaspoon

Method

Step 1

Pick, wash and soak rice for half an hour and then grind it to a coarse paste. Blanch pistachios in half a cup of hot water for five minutes. Drain, cool, remove skin and slice. Blanch tomatoes in two cups of hot water for five minutes. Drain, cool, remove skin and seeds and chop.

Step 2

Add one-fourth cup of sugar, cloves and cinnamon and cook for five minutes. Set aside to cool. Bring milk to a boil. Add rice paste dissolved in a little water or cold milk. Cook till rice is completely cooked. Stir constantly.

Step 3

Add sugar, cardamom powder and cook till sugar is completely dissolved. Take off the heat and set aside to cool. Add the stewed tomato pieces and mix well. Pour into earthenware or china bowls and garnish with sliced pistachios. Chill in a refrigerator for an hour before serving.
