History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Tawa Pomfret Recipe

  • Pomfrets whole, cleaned 2 medium

  • Salt to taste

  • Lemon juice 1½ tablespoons

  • Red chilli powder 1 teaspoon

  • turmeric powder ½ teaspoon

  • Hung yogurt ¾ cup

  • Ginger-garlic paste 1 tablespoon

  • Garam masala powder 1 teaspoon

  • Red chilli paste 1 tablespoon

  • Oil 1 tablespoon

  • Butter as required

  • Lemon slices for garnishing

Method

Step 1

Make incisions on both side of the pomfrets and place on a plate. Sprinkle salt, drizzle 1 tablespoon lemon juice and add ½ teaspoon chilli powder and turmeric powder and rub well on both sides. Set aside for 5-10 minutes.

Step 2

Take hung yogurt in a bowl. Add ginger-garlic paste, remaining chilli powder, garam masala powder, chilli paste, salt and remaining lemon juice and mix well. Add 1 tablespoon oil and mix.

Step 3

Add the marinated pomfrets and coat well with the marinade. Set aside to marinate for 25-30 minutes.

Step 4

Heat some butter on a non-stick tawa. Place the marinated pomfrets and shallow-fry, turning sides, till the fish is cooked and evenly done on both sides.

Step 5

Transfer on a serving platter. Garnish with coriander leaves and serve hot with lemon slices.
