Ingredients list for Spicy Mango Chicken Wings

  • 8-12 Chicken wings disjointed
  • 2 medium Ripe mangoes peeled, deseeded and cut into small cubes
  • 2 teaspoon Red chilli powder
  • 2 tablespoons Olive oil
  • 1 medium Onion chopped
  • to taste Salt
  • Juice of 2 lemons
  • 1 tablespoon Honey
  • 1 inch piece Ginger grated
  • ¼ teaspoon Cinnamon powder
  • 1 teaspoon Coriander powder
  • 2-4 Garlic cloves finely chopped
  • to taste Crushed black peppercorns

Method

  1. Heat olive oil in a non-stick pan. Add the onion and sauté till translucent. Add the mangoes, lightly mash and cook for one to two minutes.
  2. Take the chicken wings in a bowl. Rub salt and set aside for ten minutes.
  3. Add the mango-onion mixture, lemon juice, honey,ginger, cinnamon powder, chilli powder, coriander powder, garlic and crushed peppercorns to chicken wings and mix well.
  4. Transfer in a large zip-lock bag, seal and refrigerate for two hours.
  5. Preheat oven to 180º C. Line a baking tray with a silicon mat.
  6. Place marinated chicken wings on the lined baking tray, reserving the marinade.
  7. Put the tray into preheated oven and bake for fifteen to twenty minutes, basting with some marinade.
  8. Serve hot.
