Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Spicy Mango Chicken Wings Recipe

  • Chicken wings disjointed 8-12

  • Ripe mangoes peeled, deseeded and cut into small cubes 2 medium

  • Red chilli powder 2 teaspoon

  • Olive oil 2 tablespoons

  • Onion chopped 1 medium

  • Salt to taste

  • Juice of 2 lemons

  • Honey 1 tablespoon

  • Ginger grated 1 inch piece

  • Cinnamon powder ¼ teaspoon

  • Coriander powder 1 teaspoon

  • Garlic cloves finely chopped 2-4

  • Crushed black peppercorns to taste

Method

Step 1

Heat olive oil in a non-stick pan. Add the onion and sauté till translucent. Add the mangoes, lightly mash and cook for one to two minutes.

Step 2

Take the chicken wings in a bowl. Rub salt and set aside for ten minutes.

Step 3

Add the mango-onion mixture, lemon juice, honey,ginger, cinnamon powder, chilli powder, coriander powder, garlic and crushed peppercorns to chicken wings and mix well.

Step 4

Transfer in a large zip-lock bag, seal and refrigerate for two hours.

Step 5

Preheat oven to 180º C. Line a baking tray with a silicon mat.

Step 6

Place marinated chicken wings on the lined baking tray, reserving the marinade.

Step 7

Put the tray into preheated oven and bake for fifteen to twenty minutes, basting with some marinade.

Step 8

Serve hot.
