Shalgam Ka Bharta

A flavorful and hearty Indian dish made from turnips (shalgam). It's a variation of the popular bharta, where vegetables are roasted and then mashed with spices.

Ingredients 

  • 2 medium turnips (shalgam) boiled and mashed
  • 1 1/2 tablespoons oil
  • 10-12 garlic cloves, chopped
  • 2 medium onions, sliced finely
  • 1 inch ginger, chopped
  • 2 medium tomatoes, finely chopped
  • 1/2 teaspoon red chilli powder
  • 2-3 green chillies, finely chopped
  • Salt to taste
  • 1/2 cup finely chopped fresh coriander leaves 

Method

  1. Heat oil in a non-stick pan. Add garlic and onion and saute till light brown.
  2. Add tomatoes, ginger, red chilli powder and green chillies and saute for three to four minutes.
  3. Add shalgam and salt and mix well and cover and cook for five minutes.
  4. Add half of the coriander leaves and cook for two minutes.
  5. Serve hot garnished with remaining coriander leaves.
