Scallion Cheesy Chicken

Chicken breasts rolled with mozzarella cheese, dipped in eggs, coated with panko and baked. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Scallion Cheesy Chicken

  • 4 Boneless chicken breasts cut into butterfly
  • 100 grams Mozzarella cheese cut into thin fingers
  • 2 Spring onions with greens finely chopped
  • to taste Crushed black peppercorns
  • to taste Salt
  • 6-8 Garlic cloves finely chopped
  • 3 tablespoons Light soy sauce
  • 2 teaspoons Red chilli flakes
  • 2 tablespoons Fresh coriander leaves chopped
  • 2 tablespoons Oil
  • 2 Eggs
  • for dusting Refined flour (maida)
  • for coating Panko

Method

  1. Place chicken breasts on the worktop. Sprinkle some crushed peppercorns and salt on top and rub in well.
  2. Mix together spring onion with greens, garlic, soy sauce, chilli flakes, coriander leaves, salt and crushed peppercorns in a bowl.
  3. Heat oil in a non-stick pan till it smokes. Pour it into the bowl and mix well.
  4. Add chicken breasts and mix well. Set aside for ten to fifteen minutes.
  5. Preheat oven to 200º C.
  6. Place mozzarella cheese on each chicken breast and roll tightly folding the edges.
  7. Break eggs in another bowl. Spread flour and panko in two different plates.
  8. Dust the chicken with the flour, dip in the beaten eggs and coat with the panko.
  9. Place the chicken on a baking tray, place the tray in the preheated oven and bake for fifteen to twenty minutes.
  10. Serve hot.
