Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Cook time : 16-20 minutes

Ingredients for Santa Fe Chicken Recipe

  • Chicken Breasts 4

  • Rice (long grain) 1 cup

  • Onion chopped 1 large

  • Jalapeno chopped 2-3

  • Garlic chopped 2 cloves

  • Chicken stock 2 cups

  • Tomatoes chopped 2 large

  • Olive oil 1 tablespoon

  • Saffron (kesar) a pinch

  • Salt to taste

  • Black pepper powder 1/4 teaspoon

  • Paprika 1 teaspoon

  • Cheddar cheese grated 1/2 cup

  • Fresh coriander leaves chopped 1 tablespoons


Step 1

Heat oil in a large skillet and sauté the onion, jalapenos and garlic till onions are translucent .

Step 2

Add stock and tomatoes and bring to a boil. Stir in rice and saffron and mix.

Step 3

Sprinkle salt, pepper powder and paprika flakes on the chicken and place over the rice mixture.

Step 4

Cover and simmer for twenty minutes or until the chicken is cooked.

Step 5

Remove from the heat.

Step 6

Sprinkle cheese, cover and let stand for five minutes. Garnish with coriander leaves and serve hot.
