Ingredients
- 10-12 carrots, peeled and cut into halves
- 1 tbsp finely chopped ginger
- 7-8 tbsps sugar
- 2 tbsps fresh mint leaves
- 1 lemon
- Ice cubes as required
Method
- Heat 2 cups water in a non-stick pan. Add ginger and sugar and stir well. Let it cook till the sugar dissolves.
- Place the carrots in a juicer and squeeze out the juice alongwith mint leaves.
- Squeeze out juice of lemon into individual glasses, add 3 tbsps ginger sugar syrup, ice cubes and top with the carrot juice. Stir well.
- Serve chilled.
