Ingredients for Carrot Walnut Dip - SK Khazana Recipe

  • Small carrots peeled and cut into small cubes 2-3

  • Walnuts chopped 1/2 cup

  • Oil 1 tablespoon

  • Split red lentils (masoor dal) parboiled 3/4 cup

  • Black peppercorns crushed 1 teaspoon

  • Garlic cloves 6-7

  • Tahini 1 tablespoon

  • Coriander powder 1 1/2 teaspoons

  • Salt to taste

  • Fresh parsley chopped 1/4 cup

  • Lemon juice 1 tablespoon

  • Olive oil 2 1/.2 tablespoons

  • Fresh parsley sprig 1 to garnish


Step 1

Heat oil in a non-stick pan, add carrots and sauté for 2-3 minutes. Add walnuts and cook till carrots soften.

Step 2

Transfer the cooked mixture into a blender jar along with red lentils, black pepper, tahini, garlic cloves, coriander powder, salt, parsley, lemon juice and ½ tablespoon olive oil and grind.

Step 3

Add ¼ cup red lentils water and continue to grind.

Step 4

Transfer into a serving bowl, pour 2 tablespoons olive oil, garnish with parsley sprig and serve.
