Ingredients list for Carrot Walnut Dip - SK Khazana
- 2-3 Small carrots peeled and cut into small cubes
- 1/2 cup Walnuts chopped
- 1 tablespoon Oil
- 3/4 cup Split red lentils (masoor dal) parboiled
- 1 teaspoon Black peppercorns crushed
- 6-7 Garlic cloves
- 1 tablespoon Tahini
- 1 1/2 teaspoons Coriander powder
- to taste Salt
- 1/4 cup Fresh parsley chopped
- 1 tablespoon Lemon juice
- 2 1/.2 tablespoons Olive oil
- 1 to garnish Fresh parsley sprig
Method
- Heat oil in a non-stick pan, add carrots and sauté for 2-3 minutes. Add walnuts and cook till carrots soften.
- Transfer the cooked mixture into a blender jar along with red lentils, black pepper, tahini, garlic cloves, coriander powder, salt, parsley, lemon juice and ½ tablespoon olive oil and grind.
- Add ¼ cup red lentils water and continue to grind.
- Transfer into a serving bowl, pour 2 tablespoons olive oil, garnish with parsley sprig and serve.
