Ingredients list for Potato Halwa

  • 4 medium Potatoes peeled and grated
  • 1/2 cup Milk
  • 1/2 cup Sugar
  • 3-4 strands Saffron (kesar)
  • 1/4 teaspoon Green cardamom powder
  • 4 teaspoon Ghee
  • 5-6 Cashewnuts chopped
  • 1 tablespoon Raisins

Method

  1. Wash the grated potatoes till the water becomes clear. Drain thoroughly.
  2. Add milk to the grated potatoes and pressure cook till one whistle. Make a one string consistency syrup with sugar and one-fourth cup of water.
  3. Remove the scum that rises to the top and discard. Add saffron, green cardamom powder and cooked potatoes to the sugar syrup and cook till a halwa consistency is reached.
  4. Heat ghee in a small pan and sauté cashewnuts and raisins. Add it to the potato halwa and mix well. Serve hot.
