Ingredients list for Potato Capsicum Fry
- 500 grams Potato peeled and diced
- 1 medium Capsicum seeded and diced
- 1/2 teaspoon Turmeric powder
- to taste Salt
- 3 tablespoons Oil
- 1/2 teaspoon Cumin seeds
- 3 medium Onions diced
- 1 inch piece Ginger deseed and julienne
- 1 teaspoon Red chilli powder
- 1 teaspoon Coriander powder
- 1/2 teaspoon Garam masala powder
Method
- Boil water in a deep pan. Add half of the turmeric powder, salt and add potatoes.
- Cook till potatoes are done. Drain and set aside.
- Heat oil in a non stick pan. Add cumin seeds.
- Once they crackle, add onions, ginger, garlic and capsicum and sauté till onions are golden brown.
- Add potatoes and sauté for two minutes.
- Add remaining turmeric powder, chilli powder, coriander powder, salt, garam masala and mix well.
- Cover and cook for seven to eight minutes.
- Serve hot with roti and parantha.
