Ingredients
- 1 French Loaf
- 2-3 medium Tomatoes finely chopped
- 1 tablespoon Oil
- 1 medium Onion finely chopped
- 1 1/2 teaspoons Ginger-garlic paste
- 1/2 teaspoon Red chilli powder
- 1 medium Green capsicum
- Salt to taste
- 3 medium Potatoes boiled, peeled and mashed
- 1 1/2 tablespoons Pav bhaji masala
- 50 grams Mozzarella cheese
- for garnishing Fresh parsley sprigs
Method
- Preheat oven at 220ºC.
- Heat oil in a non-stick pan. Add onion and sauté till lightly browned.
- Cut French loaf into slices.
- Add ginger-garlic paste to the pan, mix and sauté well. Add red chilli powder, mix and saute.
- Add tomatoes, mix well, cover and cook till the tomatoes turn soft.
- Deseed and finely chop capsicum.
- Add salt to the pan, mix well, cover and cook till the oil separates.
- Add potatoes and mix well. Add pav bhaji masala, mix well and sauté. Add little water, mix, cover and cook on high heat for 3-4 minutes.
- Place bread slices on an ovenproof plate.
- Add chopped capsicum to the pan, mix and cook till capsicum turns soft.
- Grate cheese into a bowl.
- Spread cooked bhaji on each bread slice, top with grated cheese, put the plate in the preheated oven and bake till the cheese melts and bread turns crisp.
- Serve hot garnished with parsley sprigs.
