Papad ki Sabji

Papads and moong dal vadis cooked in spinach and buttermilk based gravy. Serve this with bajre ki roti. This recipe is from FoodFood TV channel

Ingredients 

  • 10 moong dal papad
  • 1/2 cup mangodi (sun-dried split skinless green gram dumplings), fried
  • 1 teaspoon mustard seeds
  • A pinch of asafoetida
  • 4-5 dried red chillies, broken
  • Salt to taste
  • 1 teaspoon red chilli powder
  • 2 tablespoons coriander powder
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons olive oil
  • 2 teaspoons refined flour (maida)
  • 2 cups buttermilk
  • 1/4 cup spinach puree

Method

  1. Tear the papads into medium sized pieces. Heat oil in a non stick pan, add mustard seeds, asafoetida and red chillies and sauté till fragrant.
  2. Add papad pieces and 1 cup water and cook for a minute. Add salt, red chilli powder, coriander power, turmeric powder and mix well. Add mangodi and mix.
  3. Put refined flour and buttermilk in a bowl and whisk well. Add spinach puree and mix well.
  4. Pour the buttermilk and spinach mixture into the pan and simmer till the papads are cooked. Serve hot.
