A favourite with the vegetarians, paneer made from milk is quite common, especially paneer recipes are quite popular in the Indian subcontinent. You can make it fresh, chhena – an another version or just use the ones that are readily available in the market to prepare everything from simple snacks, curries, sabzis, mithais, desserts and the likes. An ingredient that can be relished in the raw form too – try serving it as a starter just sprinkled with a little chaat masala, black salt and chilli powder!

Ingredients for Paneer Missi Roti Recipe

  • Paneer (cottage cheese) grated ¾ cup

  • Gram flour (besan) 1 cup

  • Whole wheat flour (atta) ¾ cup

  • Cumin seeds 1 teaspoon

  • Red chilli flakes 1 teaspoon

  • Green chillies finely chopped 2

  • Ginger finely chopped ½ inch

  • Fresh coriander leaves chopped 1 tablespoon

  • Oil 1 tablespoon + for greasing + to shallow fry

Method

Step 1

Put gram flour, whole wheat flour, grated cottage cheese, cumin seeds, red chilli flakes, green chillies, ginger and coriander leaves in a bowl. Add oil and sufficient water and knead into a firm dough.

Step 2

Divide the dough into equal portions, shape them into balls. Grease your palms with a little oil. Roll out each ball into roti.

Step 3

Heat a non-stick tawa. Cook each roti, one after the other, on it and cook for half a minute. Flip again and drizzle a little all around it and shallow-fry, turning sides, till the rotis are cooked equally on both sides.

Step 4

Serve hot.
