Yes, though other meats being more common, biryani eaters all over the world can easily swear by mutton. And not just biryanis, curries, bakes and all other preparations with this wonderful meat are always special. Did you know, unlike other dishes, a day-old mutton prep will always be all the more tastier on the palate! Try it the next time you plan on to take on this meat.

Ingredients for Mutton Stew with Garlic Bread-SK Khazana Recipe

  • Mutton cut into 1 inch pieces on the bone 750 grams

  • Butter 1 tablespoon

  • Oil 1 teaspoon

  • Black peppercorns 5-6

  • Bay leaf 1

  • Garlic finely chopped 1 tablespoon

  • Medium onions thinly sliced 2

  • Refined flour (maida) 2 tablespoons

  • Salt to taste

  • Black peppercorns crushed to taste

  • Large potato peeled and cut into 1 inch cubes 1

  • Mutton stock 3 cups

  • Garlic bread

  • Baguette 1

  • Garlic finely chopped 1 1/2 tablespoons

  • Butter 1/4 cup

  • Red chilli flakes 1/2 teaspoon

  • Fresh parsley finely chopped 1 1/2 tablespoons

  • Salt to taste

  • Black peppercorns crushed to taste

Method

Step 1

To make garlic bread, preheat oven to 180º C. Slice baguette and set aside.

Step 2

Mix together butter, chilli flakes, garlic, parsley, salt and crushed peppercorns in a bowl.

Step 3

Spread garlic-herb butter generously on the baguette slices and arrange on a tray. Put the tray in the preheated oven and bake for 5-6 minutes.

Step 4

Heat butter and oil in a pressure cooker, add peppercorns, bay leaf and garlic, mix and sauté till garlic turns golden brown.

Step 5

Add onions, mix and sauté till translucent. Add mutton pieces, mix well and cook on high heat for 5-6 minutes.

Step 6

Add flour and mix well. Add salt, crushed peppercorns and potatoes mix well. Add stock, mix well, cover and cook under pressure till 6-7 whistles are released.

Step 7

Serve hot with garlic bread.
