Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Mutton Seekh Kebab Recipe

  • Mutton mince 500 grams

  • Medium onion chopped 1

  • Ginger-garlic paste 1 tablespoon

  • Fresh coriander leaves 2 tablespo teaspoon

  • Green chillies chopped 2-3

  • Fresh cream 1 tablespoon

  • Papaya paste 1 tablespoon

  • Red chilli powder 1 teaspoon

  • Roasted cumin powder 1 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Browned onion paste 1 tablespoon

  • Salt to taste

  • Fresh breadcrumbs 1/4 cup

  • Oil for drizzling

  • Chaat masala to sprinkle

  • Lemon wedges to garnish

  • Onion rings to garnish


Step 1

Put mutton mince into a blender jar, add onion, ginger-garlic paste, 2 tablespoons coriander leaves, green chillies, fresh cream and papaya paste and blend into a smooth mixture.

Step 2

Transfer this mixture into a bowl and stir to loosen it. Add red chilli powder, roasted cumin powder, garam masala powder, browned onion paste, salt and 1 teaspoon coriander leaves, mix well with your fingers. Add fresh breadcrumbs and mix well.

Step 3

Wrap the mixture around one half of the sugarcane sticks and smoothen the surface. Keep them on a plate and place the plate in a refrigerator to chill and set for some-time.

Step 4

Heat some oil in a non-stick grill pan and place the seekh kebabs in it and grill, rotating them so that get cooked evenly from all sides, and turn golden with grill marks.

Step 5

Arrange them on a serving platter, sprinkle some chaat masala over them and serve hot with lemon wedges and onion rings.
