Ingredients list for Mix Vegetable Pickle

  • 1 cup Carrot cut into 1 inch pieces
  • 1 cup Cauliflower cut into small florets
  • 1 cup Radish cut into 1 inch pieces
  • 1 cup Turnips cut into 1 inch pieces
  • 3 tablespoons Oil
  • 2 tablespoons Jaggery grated
  • 1 teaspoon Mustard seeds
  • 2 tablespoons Ginger garlic paste
  • 2 tablespoons Onion paste
  • to taste Salt

Method

  1. Heat two tablespoons oil in a non stick pan, add carrot, cauliflower, radish and turnips. Stir for one minute. Remove on a plate.
  2. Spread the jaggery on it.
  3. In the same pan add the remaining oil, add mustard seeds and when they splutter add ginger garlic paste and onion paste. Saute for two minutes. Mix the vegetables in the pan and add salt. Toss well.
  4. Remove in a jar and serve with roti.
