Ingredients list for Medley Of Vegetables

  • 6-8 Button Mushroom quartered
  • 2 slices Spring onions
  • 1 Carrot,1/2 inch cubes
  • 1/4 small Cauliflower
  • 1/4 cup Green peas
  • 5-6 French beans ,diamond shaped
  • 8-10 Baby potatoes,boiled
  • 1 1/2 cups Orange juice
  • 3/4 cup Carrot juice
  • 3 tablespoons Tomato ketchup
  • 5-6 floret Broccoli
  • a few sprigs Fresh thyme,crushed
  • to taste Salt
  • 1 teaspoon Red chilli flakes
  • 2 Spring onion greens,chopped
  • 2 teaspoons Lemon juice

Method

  1. Heat a non-stick pan slightly and pour orange juice into it. Add mushrooms and cook for a minute. Add spring onions, carrot, cauliflower florets, peas and French beans. Add half of the baby potatoes cut into halves, carrot puree and tomato ketchup. Stir and cook for few minutes.
