The Maharashtrian hospitality is legendary. The cuisine has subtle variety and strong flavours and varies from region to region. In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! Ingredients for Kankairi Recipe

  • Raw mango grated 1 medium

  • Oil 2 tablespoons

  • Fenugreek seeds (methi dana) 1/2 teaspoon

  • Mustard seeds 1/2 teaspoon

  • Turmeric powder 1/2 teaspoon

  • Red chilli powder 1/4 teaspoon

  • Onion grated 1 medium

  • Jaggery (gur) grated 1 tablespoon

  • Salt to taste

Method

Step 1

Heat oil in a nonstick pan, add fenugreek seeds and mustard seeds, allow it to splutter.

Step 2

Add turmeric powder, red chilli powder, grated mango and onion. Mix well. Saute for two minutes.

Step 3

Add jaggery and salt .Mix well and sprinkle little water.

Step 4

Cook for two minutes and serve.
