Ingredients
- 250 grams tinned jackfruit
- 1/4 cup chopped onions
- 3 tablespoons oil + to deep fry
- 1 black cardamom, seeds separated
- 4-5 dried red chillies, broken
- 3/4 teaspoon roasted cumin powder
- 1/2 teaspoon garam masala powder
- 2 teaspoons coriander powder
- 1/2 teaspoon Mexican chilli powder
- 1/2 teaspoon red chilli powder
- 1/4 teaspoon turmeric powder
- 1 cup tomato puree
- Salt to taste
Method
- Drain the jackfruit pieces and deep fry till golden. Drain on absorbent paper.
- Heat 3 tbsps oil in another pan, add onions and saute till well browned.
- Add black cardamom seeds and red chillies and continue to saute for 2 minutes.
- Add roasted cumin powder and garam masala powder and saute for 1 minute.
- Add coriander powder, Mexican chilli powder, red chilli powder and turmeric powder and mix well.
- Add tomato paste or tomato puree and mix well. Saute till oil begins to separate. Add salt and mix.
- Add fried jackfruit pieces and mix well. Ideally keep the curry for 1 day so that the jack fruit pieces soak in the masala well.
- Next day heat the curry and serve hot with roti.
