Ingredients list for Green Chana Waffle

  • 1 1/2 cups Fresh green chana , blanched
  • 3-4 cloves Garlic
  • 2-3 Green chillies
  • 1 medium Onion
  • to taste Salt
  • 1/2 tablespoon Cumin powder
  • 2 1/2 tablespoons Gram flour (besan)
  • 1 teaspoon Baking powder
  • 1 tbsp + for greasing Olive oil
  • to garnish Micro greens
  • to serve Red radish slices
  • to serve Iceberg lettuce leaves
  • to serve Pickled beetroot pieces
  • to serve Garlic aioli

Method

  1. Put green chana, garlic and broken green chillies into a food processer jar.
  2. Roughly chop onion and add. Add salt, cumin powder and a little water and process into a coarse paste. Transfer into a large bowl.
  3. Add gram flour and baking powder and mix well. Add olive oil and mix well.
  4. Heat a non-stick waffle iron, grease with oil and pour some mixture and spread it evenly. Close and cook till golden and crisp. Remove and place on a serving plate. Make more waffles similarly.
  5. Arrange the waffles on a serving dish, garnish with microgreens and serve hot with radish, lettuce, pickled beetroot and garlic aioli.
