You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Egg Hoppers Recipe

  • Eggs 4

  • Rice

  • Rice soaked 2 cups

  • Coconut scraped 1 cup

  • Rice cooked 1 cup

  • White bread slices soaked 3-4 slices

  • Salt to taste

  • Soda bicarbonate 1/2 teaspoon

  • Sugar 1 teaspoon

  • Sesame oil (til oil) to shallow fry

  • Red chilli flakes 1 teaspoon

Method

Step 1

Drain the soaked rice and grind it to a smooth paste.

Step 2

Grind together coconut, cooked rice and bread slices to a smooth paste. Mix the two pastes, add enough water to make a batter of pouring consistency.

Step 3

Leave it overnight to ferment. Just before preparing add salt, soda bicarbonate and sugar. Whisk well.

Step 4

Heat an appam tava and grease it lightly. Pour a ladleful of the batter into the pan and tilt it around to thinly coat the sides of the pan with a thick layer in the centre. Cover and cook for two minutes.

Step 5

Break an egg over the centre, cover with a lid and cook till the egg is cooked and the edges of the hopper turn brownish.

Step 6

Sprinkle red chilli flakes, ease the hopper onto a plate and serve immediately.
