Egg Fried Rice

Ingredients list for Egg Fried Rice

  • 2 Eggs whisked
  • 2 cups Cooked Rice cooked
  • 2 Spring onions with greens finely chopped
  • 1 tablespoon Oil
  • 1 teaspoon Garlic
  • 1 medium Carrot finely chopped
  • 4-6 French beans finely chopped
  • 1 medium Green capsicum finely chopped
  • 2 teaspoon Soy sauce
  • to taste Salt
  • 1/4 teaspoon White pepper powder
  • 1 tablespoon Vinegar

Method

  1. Reserve some spring onion greens for garnish.
  2. Heat oil in a wok, add garlic and spring onions and sauté for one minute.
  3. Add carrot, French beans and capsicum and continue to sauté for another minute.
  4. Add rice and cook on high heat for a minute or until the rice is heated through, tossing continuously.
  5. Add soy sauce, salt and white pepper powder and mix gently. .
  6. Transfer into the serving bowl. In the same wok, pour the whisked eggs and lightly scramble .
  7. Add the fried rice to this and mix.
  8. Mix in vinegar and serve hot, garnished with the reserved spring onion greens.
