The Maharashtrian hospitality is legendary. The cuisine has subtle variety and strong flavours and varies from region to region. In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! The presentation of food was alluring with a practice to sing sacred verses to dedicate the meal to God.

Ingredients for Dahi Bhindi Recipe

  • Yogurt whisked 1 1/2 cups

  • Ladyfingers 400 grams

  • Oil 1 teaspoon

  • Salt to taste

  • Gram flour (besan) 5 tablespoons

  • Turmeric powder 1/2 teaspoon

  • Dried red chillies 3

  • Coriander powder 2 teaspoons

Method

Step 1

Wipe ladyfingers dry with a clean kitchen towel. Cut into large pieces.

Step 2

Heat oil in a non stick pan, add ladyfingers and salt. Toss and cook on medium heat for 3-4 minutes.

Step 3

Roast besan in another non stick pan till fragrant.

Step 4

Place yogurt in a bowl. Add turmeric powder and salt and whisk till smooth.

Step 5

Cut red chillies into pieces and add to ladyfingers along with coriander powder. Toss again.

Step 6

Add roasted besan, mix well and cook for another 2-3 minutes.

Step 7

Add yogurt mixture. Mix well, lower heat, cover and cook for 10-15 minutes, stirring once a while.

Step 8

Serve hot.
