Ingredients list for Curried Chicken Rice

  • 1 tablespoon Curry powder
  • 100 grams Boneless chicken cut into juliennes
  • 2 cups Rice boiled
  • 1 tablespoon Oil
  • 8-10 Garlic cloves chopped
  • 1 medium Onion chopped
  • 2 Fresh red chillies
  • to taste Salt
  • 1 teaspoon Soy sauce
  • as required Chicken stock
  • 8-10 Fresh coriander stems
  • 2 tablespoons Fresh coriander leaves chopped
  • for garnishing Fresh coriander sprigs

Method

  1. Heat oil in a non-stick wok. Add garlic and sauté well. Add onion and sauté for a minute.
  2. Chop red chillies and too the pan and sauté for a minute. Add curry powder and sauté for a minute.
  3. Add chicken and sauté for 2 minutes. Add salt, soy sauce, mix well and cook.
  4. Add 2 tablespoons chicken stock, mix well and cook till the stock is absorbed.
  5. Chop coriander stems and add along with rice. Toss well.
  6. Add chopped coriander and toss well.
  7. Garnish with coriander sprig and serve hot.
