Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Ingredients for Corn and Spinach Risotto Recipe

  • Corn kernels boiled 1 cup

  • Spinach shredded 1 cup

  • Arborio rice 1½ cup

  • Butter 1 tablespoon

  • Oil 1 teaspoon

  • Onion chopped 1 medium

  • Garlic chopped 1 tablespoon

  • Fresh thyme chopped 1 teaspoon

  • White wine ¼ cup

  • Vegetable stock 3 cups

  • Fresh cream ¼ cup

  • Salt to taste

  • Black pepper powder to taste

  • Parmesan cheese powder 1 tablespoon + for garnishing

Method

Step 1

Heat butter and oil in a non-stick pan. Add onion and sauté till onion turns translucent.

Step 2

Add garlic, mix and sauté till garlic turns brown. Add thyme, mix and sauté for a minute.

Step 3

Add rice, mix and sauté for 3-4 minutes. Add wine, mix and cook for 2-3 minutes.

Step 4

Add vegetable stock, little by little, and keep mixing. Cook for 4-5 minutes.

Step 5

Add spinach, mix well and cook for 2 minutes. Add corn kernels, mix well and cook for 2-3 minutes.

Step 6

Add cream, mix and cook on low heat for 2 minutes. Add salt, pepper powder and Parmesan cheese powder. Mix well and cook for a minute.

Step 7

Serve hot garnished with parmesan cheese powder.
