Ingredients for Cinnamon and Vanilla Pancakes with Poached Strawbe Recipe

  • Refined flour (maida) 1 cup

  • Strawberries halved 10

  • Castor sugar 1/8 cup + ½ cup

  • Salt 1/2 teaspoon

  • Cinnamon powder 1/4 teaspoon

  • Baking powder 1 teaspoon

  • Milk 3/4 cup

  • Egg lightly whisked 1

  • Vanilla essence 1 teaspoon

  • Butter melted 1 tablespoon

  • Butter for shallow frying


Step 1

Heat a non-stick pan; add strawberries and ⅛ cup castor sugar. Stir and bring to a boil, lower heat and simmer for 25 minutes. Set aside.

Step 2

In a bowl sift together flour, sugar, salt, cinnamon and baking powder.

Step 3

Make a well and add milk, egg, vanilla essence, 1 tablespoon melted butter and 1 teaspoon hot water. Whisk until a smooth batter is formed.

Step 4

Heat butter in a non-stick pan. Pour ladleful of batter in it and spread into small roundels. These are pikelets. Cook them till both sides are golden.

Step 5

Serve with poached strawberries.
