Ingredients list for Cinnamon and Vanilla Pancakes with Poached Strawbe

  • 1 cup Refined flour (maida)
  • 10 Strawberries halved
  • cup Castor sugar 1/8 cup + ½
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Cinnamon powder
  • 1 teaspoon Baking powder
  • 3/4 cup Milk
  • 1 Egg lightly whisked
  • 1 teaspoon Vanilla essence
  • 1 tablespoon Butter melted
  • for shallow frying Butter

Method

  1. Heat a non-stick pan; add strawberries and ⅛ cup castor sugar. Stir and bring to a boil, lower heat and simmer for 25 minutes. Set aside.
  2. In a bowl sift together flour, sugar, salt, cinnamon and baking powder.
  3. Make a well and add milk, egg, vanilla essence, 1 tablespoon melted butter and 1 teaspoon hot water. Whisk until a smooth batter is formed.
  4. Heat butter in a non-stick pan. Pour ladleful of batter in it and spread into small roundels. These are pikelets. Cook them till both sides are golden.
  5. Serve with poached strawberries.
