How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Cook time : 41-50 minutes

Ingredients for Chinese Style Vegetable Claypot Rice Recipe

  • Short grain rice , soaked for 1 hour and drained 1 1/2 cups

  • Olive oil 2 tablespoons

  • Onions , peeled 2 medium

  • Carrots 2 medium

  • Ginger , grated 1 1/2 tablespoons

  • Garlic , grated 1 1/2 tablespoons

  • Button mushrooms , halved 1 cup

  • Salt to taste

  • Soy sauce 1 teaspoon

  • Vegetable stock 3 cups

  • Black pepper powder 1/2 teaspoon

  • Sesame oil (til oil) 1 teaspoon


Step 1

Heat olive oil in a deep pan. Roughly chop onions and add and sauté.

Step 2

Cut carrots into medium sized pieces and add. Add ginger and garlic, mix well and continue to sauté.

Step 3

Preheat oven to 160° C.

Step 4

Add button mushrooms, mix well and sauté for 2 minutes. Add salt, soy sauce and vegetable stock and mix well. Add rice and pepper powder and mix. Cover and cook on low heat till half done.

Step 5

Transfer the mixture into a claypot. Add sesame oil and cover, keep the clay pot in the preheated oven and cook for 25-30 minutes or till the rice is completely cooked. Let it remain in the oven for some time.

Step 6

If you want to cook in the Microwave oven, cook at HIGH for 6-7 minutes and let it remain in the oven for some time. Ensure that the mixture remains moist.

Step 7

Transfer onto a serving platter and serve hot.
