  • 1001 grams Boneless chicken cut into cubes
  • 1 1/2 cups Rice cooked
  • 2 tablespo teaspoon Oil
  • 2 Eggs
  • to taste Salt
  • to taste Black peppercorns crushed
  • 1/2 tablespoon Garlic finely chopped
  • 1/2 tablespoon Ginger finely chopped
  • 2 Dried red chillies broken
  • 2 tablespo cup Schezwan sauce
  • 1 cup Noodles boiled
  • 1 tablespo for garnish Spring onion greens chopped
  • to serve Fried noodles
  • Gravy
  • 100 grams Boneless chicken cut into small pieces
  • 1 tablespo to deep fry Oil
  • to taste Salt
  • to taste Black peppercorns
  • 2 tablespoons Cornflour
  • 1/2 tablespoon Garlic finely chopped
  • 1/2 tablespoon Ginger finely chopped
  • 1 Small onion cut into cubes and layers separated
  • 1 Dried red chilli broken
  • 1/2 cup Schezwan sauce
  • 1 teaspoon Soy sauce
  • 1 tablespoon Cornflour slurry
  • to taste Salt
  • to taste Black peppercorns
  • 1 tablespoon Spring onion greens chopped

Method

  1. For the gravy heat sufficient oil in a kadai.
  2. Mix together chicken, salt, crushed peppercorns and cornflour in a bowl. Deep-fry chicken pieces in hot oil for 2-3 minutes or till golden brown. Drain on absorbent paper and set aside.
  3. For the fried rice, heat 1 tablespoon oil in a non-stick pan. Break an egg and put in a bowl, add salt and crushed peppercorns and beat lightly. Add to the pan and cook stirring to make scrambled egg. Transfer into a plate and set aside.
  4. Heat 1 tablespoon oil in another non-stick pan, add garlic, ginger, broken red chillies and 2 tablespoons schezwan sauce and mix well.
  5. Add chicken cubes and mix. Add a little water and mix and cook till the chicken is done.
  6. Add noodles and cooked rice and toss well.
  7. Add ½ cup schezwan sauce and mix. Add scrambled egg and mix. Add some chopped spring onion greens and mix well. Keep it aside.
  8. To make the gravy, heat 1 tablespoon oil in yet another non-stick pan, add garlic, ginger, onion, broken red chilli and mix well. Add schezwan sauce and some water and mix well.
  9. Add soy sauce, cornflour slurry, mix and cook till the mixture thickens.
  10. Add fried chicken cubes and mix well. Add salt, crushed black peppercorns, spring onion greens and mix. Set aside.
  11. Heat 1 teaspoon oil in a clean non-stick pan, break the remaining egg into it and fry the egg on both sides.
  12. Put some fried rice on one side of a serving plate and keep the fried egg over it. Put some gravy in a bowl and keep it beside the rice. Keep the fried noodles in another bowl and serve immediately.
