Ingredients list for Chicken Triple Fried Rice-SK Khazana
- 1001 grams Boneless chicken cut into cubes
- 1 1/2 cups Rice cooked
- 2 tablespo teaspoon Oil
- 2 Eggs
- to taste Salt
- to taste Black peppercorns crushed
- 1/2 tablespoon Garlic finely chopped
- 1/2 tablespoon Ginger finely chopped
- 2 Dried red chillies broken
- 2 tablespo cup Schezwan sauce
- 1 cup Noodles boiled
- 1 tablespo for garnish Spring onion greens chopped
- to serve Fried noodles
- Gravy
- 100 grams Boneless chicken cut into small pieces
- 1 tablespo to deep fry Oil
- to taste Salt
- to taste Black peppercorns
- 2 tablespoons Cornflour
- 1/2 tablespoon Garlic finely chopped
- 1/2 tablespoon Ginger finely chopped
- 1 Small onion cut into cubes and layers separated
- 1 Dried red chilli broken
- 1/2 cup Schezwan sauce
- 1 teaspoon Soy sauce
- 1 tablespoon Cornflour slurry
- to taste Salt
- to taste Black peppercorns
- 1 tablespoon Spring onion greens chopped
Method
- For the gravy heat sufficient oil in a kadai.
- Mix together chicken, salt, crushed peppercorns and cornflour in a bowl. Deep-fry chicken pieces in hot oil for 2-3 minutes or till golden brown. Drain on absorbent paper and set aside.
- For the fried rice, heat 1 tablespoon oil in a non-stick pan. Break an egg and put in a bowl, add salt and crushed peppercorns and beat lightly. Add to the pan and cook stirring to make scrambled egg. Transfer into a plate and set aside.
- Heat 1 tablespoon oil in another non-stick pan, add garlic, ginger, broken red chillies and 2 tablespoons schezwan sauce and mix well.
- Add chicken cubes and mix. Add a little water and mix and cook till the chicken is done.
- Add noodles and cooked rice and toss well.
- Add ½ cup schezwan sauce and mix. Add scrambled egg and mix. Add some chopped spring onion greens and mix well. Keep it aside.
- To make the gravy, heat 1 tablespoon oil in yet another non-stick pan, add garlic, ginger, onion, broken red chilli and mix well. Add schezwan sauce and some water and mix well.
- Add soy sauce, cornflour slurry, mix and cook till the mixture thickens.
- Add fried chicken cubes and mix well. Add salt, crushed black peppercorns, spring onion greens and mix. Set aside.
- Heat 1 teaspoon oil in a clean non-stick pan, break the remaining egg into it and fry the egg on both sides.
- Put some fried rice on one side of a serving plate and keep the fried egg over it. Put some gravy in a bowl and keep it beside the rice. Keep the fried noodles in another bowl and serve immediately.
