Noteworthy changes in Italian cuisine happened with the discovery of the New World and the introduction of potatoes, tomatoes, bell peppers and maize, which are now an integral part of this cuisine.  Italian cuisine is known for its regional diversity each with a distinct taste.  This cuisine today is probably one of the most popular in the world.

Ingredients for Chicken Tortellini With Creamy Mushroom Sauce Recipe

  • Dough

  • Refined flour (maida) 2 cups

  • Salt to taste

  • Eggs beaten 3

  • Olive oil 2 teaspoons

  • Filling

  • Chicken mince 1/2 cup

  • Spinach blanched and roughly chopped 1/2 cup

  • Egg beaten 1

  • Salt to taste

  • Crushed black peppercorns 1 teaspoon

  • Parmesan cheese grated 2 teaspoons

  • Sauce

  • Fresh cream 1 1/2 cups

  • Garlic finely chopped 2 cloves

  • Button mushrooms sliced thickly 8-10

  • Parmesan cheese grated 2 tablespoons

  • To Serve

  • Parmesan cheese grated for garnish

  • Fresh parsley chopped 1 tablespoon

Method

Step 1

To make pasta dough, sift refined flour with salt into a bowl.

Step 2

Make a well in the centre and add eggs and oil. Using a fork or your fingertips, gradually mix all the ingredients and knead into a dough. Set aside.

Step 3

To make the filling, mix together chicken mince, spinach, egg, salt, crushed peppercorns and Parmesan cheese.

Step 4

Roll the pasta dough thinly and cut into two-inch roundels using a round cutter.

Step 5

Place a small portion of the filling on one side of each round.

Step 6

Fold the other side over and seal the edges to get a half moon shape.

Step 7

Take the two ends backwards and press together.

Step 8

Bring the water to a boil in a deep non-stick pan.

Step 9

Add the salt and prepared tortellini and cook till the tortellini starts floating on water.

Step 10

It can take three to four minutes.To make the sauce, boil together cream and garlic in a non-stick pan.

Step 11

Add mushrooms, Parmesan cheese and salt and cook for two to three minutes.

Step 12

Arrange the blanched tortellini on a serving plate and pour the sauce over.

Step 13

Sprinkle some Parmesan cheese on top. Serve hot garnished with parsley.
