Ingredients list for Chicken Burnt Garlic Rice

  • 100 grams Boneless chicken cut into small cubes
  • 10-12 Garlic cloves chopped
  • 5-6 Garlic cloves
  • 2 1/2 cups Cooked rice
  • 1 1/2 tablespoons Oil
  • 1 medium Onion finely chopped
  • 1 teaspoon Crushed black peppercorns
  • 1 teaspoon Red chilli flakes
  • to taste Salt
  • 1/2 teaspoon Soy sauce
  • 5-6 stalks Spring onion greens chopped
  • 1 teaspoon Vinegar

Method

  1. Heat 1 tablespoon oil in a non-stick pan. Add chopped garlic, onion and sauté for 1 minute.
  2. Add chicken cubes, mix and sauté for 3-4 minutes.
  3. Add ½ teaspoon crushed peppercorns, ½ teaspoon red chilli flakes and salt and sauté for 1 minute.
  4. Add rice, mix and sauté for 1 minute. Add salt, remaining crushed peppercorns and remaining red chilli flakes.
  5. Heat remaining oil in another non-stick pan. Slice garlic cloves, add and sauté till golden.
  6. Reserve some sautéed sliced garlic for garnishing and add the remaining to the rice. Add soy sauce, mix well and sauté for 1 minute.
  7. Add spring onion greens, mix and sauté for 1 minute.
  8. Add vinegar and mix well. Serve hot.
