Ingredients list for Cantonese Chicken

  • 250 grams Boneless chicken cut into thin strips
  • 1 tablespoon Oil
  • 1 cup Noodles boiled
  • 1 cup Bean sprouts
  • 2-3 stalks Spring onion greens chopped
  • 1 tablespoon Soy sauce
  • to taste Salt
  • 1 teaspoon Black pepper powder
  • 1 tablespoon Garlic minced
  • 1 inch Ginger cut into juliennes
  • 1 teaspoon Vinegar
  • 1/2 teaspoon Sugar
  • 1 1/2 tablespoons Cornstarch
  • 1 cup Chicken stock

Method

  1. Heat ½ tablespoon oil in a non-stick wok. Add noodles and sauté for half a minute. Add bean sprouts and mix. Add spring onion greens, soy sauce and mix well.
  2. Add salt and ½ teaspoon pepper powder and mix well. Cook for a minute.
  3. Heat remaining oil in another non-stick wok. Add garlic and sauté till lightly browned. Add chicken strips, mix and cook on high heat till chicken changes colour.
  4. Add remaining pepper powder and salt and mix well. Add ginger juliennes and mix well.
  5. Add vinegar and mix. Add sugar, mix well and simmer for a minute.
  6. Take cornstarch in a bowl. Add chicken stock and mix well into a smooth slurry.
  7. Add slurry to the chicken and mix well. Increase heat and cook till the sauce thickens and chicken is fully cooked.
  8. Transfer chicken in a serving dish. Top with noodle-sprout mixture and serve immediately.
