Baked Vegetables in Spinach Sauce

Ingredients 

  • ½ cup boiled and cubed carrots 
  • ½ cup green peas, boiled
  • ½ cup french beans, halved and boiled
  • 1 cup chopped spinach 
  • 2 cups white sauce
  • 1 tablespoon butter + for greasing
  • Black pepper powder to taste
  • 2 tablespoons fresh cream
  • Salt to taste
  • 1 medium onion,finely chopped
  • 1 teaspoon red chilli powder
  • 4 tablespoons grated processed cheese 

Method

  1. Preheat oven at 180ºC. Grease a baking dish with some butter.
  2. Boil sufficient water in a non-stick pan. Add spinach and blanch for a minute. Switch off heat and rinse in water.
  3. Blend blanched spinach into a fine puree, add to the white sauce and mix well. Add pepper powder and salt and mix. Add cream and mix well.
  4. Heat butter in a non-stick pan. Add onion and sauté till it turns translucent. Add carrot, peas and beans and sauté for ½ minute.
  5. Add salt, mix and sauté for a minute. Add red chilli powder, mix well and sauté on high heat for a minute. Switch off heat and cool to room temperature.
  6. Add prepared spinach sauce to the sautéed vegetables and mix well.
  7. Spread the prepared vegetable mixture in the greased baking dish. Top with cheese and bake in preheated oven for 10 minutes.
  8. Serve hot.
