By Sanjeev Kapoor 09 Jun 2016 in Recipes Course New Update Main Ingredients Carrots, Green peas Cuisine Fusion Course Main Course Vegetarian Prep Time 16-20 minutes Cook time 31-40 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Advertisment Ingredients list for Baked Vegetables in Spinach Saucei ½ cup Carrots boiled, cubed ½ cup Green peas boiled ½ cup French beans boiled, halved 1 cup Spinach chopped 2 cups White sauce + for greasing Butter 1 tablespoon to taste Black pepper powder 2 tablespoons Fresh cream to taste Salt 1 medium Onion finely chopped 1 teaspoon Red chilli powder 4 tablespoons Processed cheese grated Method Preheat oven at 180ºC. Grease a baking dish with some butter. Boil sufficient water in a non-stick pan. Add spinach and blanch for a minute. Switch off heat and rinse in water. Blend blanched spinach into a fine puree, add to the white sauce and mix well. Add pepper powder and salt and mix. Add cream and mix well. Heat butter in a non-stick pan. Add onion and sauté till it turns translucent. Add carrot, peas and beans and sauté for ½ minute. Add salt, mix and sauté for a minute. Add red chilli powder, mix well and sauté on high heat for a minute. Switch off heat and cool to room temperature. Add prepared spinach sauce to the sautéed vegetables and mix well. Spread the prepared vegetable mixture in the greased baking dish. Top with cheese and bake in preheated oven for 10 minutes.
