Ingredients list for Assorted Vegetable Rice
- 1 cup Rice soaked and boiled
- 5-6 French Beans finely chopped
- 2 medium Carrots finely chopped
- 6-7 Button mushroom diced
- 5-6 Babycorns finely chopped
- 1 long Brinjal cut into cubes and deep fried.
- 1 tablespoon Garlic chopped
- 2 tablespoons Oil
- 1 teaspoon Soy sauce
- to taste Salt
- 1 tablespoon Five spice powder
- 1 stalk Spring onion greens finely chopped
Method
- Heat oil in a deep non-stick pan. Add the garlic and sauté for two minutes.
- Add the beans and carrots, mix well and sauté for three to four minutes.
- Add the mushrooms and baby corns, mix well and cook till dry.
- Add the brinjals and cook till all the vegetables are done.
- Add the boiled rice, five-spice powder, soy sauce and salt and mix well.
- Serve hot garnished with spring onion greens.
