How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Assorted Vegetable Rice Recipe

  • Rice soaked and boiled 1 cup

  • French Beans finely chopped 5-6

  • Carrots finely chopped 2 medium

  • Button mushroom diced 6-7

  • Babycorns finely chopped 5-6

  • Brinjal cut into cubes and deep fried. 1 long

  • Garlic chopped 1 tablespoon

  • Oil 2 tablespoons

  • Soy sauce 1 teaspoon

  • Salt to taste

  • Five spice powder 1 tablespoon

  • Spring onion greens finely chopped 1 stalk


Step 1

Heat oil in a deep non-stick pan. Add the garlic and sauté for two minutes.

Step 2

Add the beans and carrots, mix well and sauté for three to four minutes.

Step 3

Add the mushrooms and baby corns, mix well and cook till dry.

Step 4

Add the brinjals and cook till all the vegetables are done.

Step 5

Add the boiled rice, five-spice powder, soy sauce and salt and mix well.

Step 6

Serve hot garnished with spring onion greens.
