Ingredients list for Aamras ki Kadhi-SK Khazana

  • 1/2 cup Raw mango puree
  • 1/2 cup Ripe mango puree
  • 3 tablespoons Gram flour (besan)
  • as required Buttermilk
  • to taste Salt
  • 2 tablespoons Ghee
  • 1 teaspoon Mustard seeds
  • 1/4 teaspoon Fenugreek seeds (methi dana)
  • 12-16 Curry leaves
  • 2 Green chillies slit
  • 1/4 teaspoon Asafoetida (hing_
  • for garnish Boondi
  • for garnish Fresh coriander sprig

Method

  1. Whisk together raw mango pulp, ripe mango pulp, gram flour, buttermilk and salt in a bowl till smooth.
  2. Heat ghee in a non-stick pan. Add mustard seeds and let the seeds splutter.
  3. Add fenugreek seeds, curry leaves, green chilies and asafoetida, mix well and sauté for 2 minutes.
  4. Add mango pulp mixture and mix. Adjust consistency by adding sufficient water, add salt, mix and boil on low heat for 5-10 minutes.
  5. Garnish with boondi and coriander sprig and serve hot with steamed rice.
