Ingredients
- 1 cup refined flour
- ¼ cup corn flour
- ¾ teaspoon baking powder
- 2½ tablespoons milk powder
- ¼ + ⅛ cup castor sugar
- ¼ cup melted butter + for greasing
- 1 teaspoon vanilla essence
- Icing
- 1 cup mascarpone cheese
- ¼ cup castor sugar
- 1 cup whipped cream
- Coffee mixture
- 1 cup coffee decoction
- 1 tablespoon castor sugar
- Garnish
- Cocoa powder for dusting
- Chocolate coffee beans for garnish
Method
- Sift together refined flour, corn flour, baking powder, milk powder and castor sugar into a bowl. Add 1 cup water gradually and whisk till a smooth batter is formed. Add melted butter and vanilla essence and mix well.
- Grease the waffle machine with butter, pour a portion of the batter into it, cover and cook for 3-4 minutes or till done. Remove the waffle and allow to cool completely. Make more waffles with the remaining batter.
- To make the icing, take mascarpone cheese in a bowl. Add castor sugar and whisk well. Add whipped cream and gently fold in till well combined. Transfer the mixture in piping bag. And cut the tip of the piping bag.
- Mix coffee decoction and castor sugar in another bowl. Dip one side of each waffle in the coffee decoction mixture and arrange them on a serving plate.
- Pipe out peaks of the cream mixture on one waffle, gently place another waffle over it and pipe out some more peaks over it. Sprinkle some cocoa powder, garnish with chocolate coffee beans. Serve.
