Pumpkin Seed Hummus

Hummus is a popular Middle Eastern dip . Here we have added green pumpkin seeds and parsley to chickpeas to give another version that will make a perfect dip that can be served with lavash, pita or vegetable crudites.

Method

  1. Reserve a few chickpeas for garnish and transfer remaining into a grinding jar. Add green pumpkin seeds and squeeze the juice of lemon.
  2. Add parsley, crushed black peppercorns, salt, extra virgin olive oil and chickpea stock and grind to fine mixture.
  3. Transfer into a serving bowl, sprinkle reserved chickpeas, paprika powder and pumpkin seeds on top.
  4. Drizzle extra virgin olive oil, garnish with parsley sprig and serve with lavash.
