Poi With Eggs

A typical Goan breakfast, poi or bread served with scrambled eggs, grilled sausages and a cherry tomato salad. Looks lovely, no? This is Sanjeev Kapoor exclusive recipe.

Ingredients

Method

  1. For each portion break 3 eggs into a bowl, add salt and ¼ cup milk and whisk well. 
  2. Heat 2 teaspoons olive oil in a non-stick grill pan.
  3. Cut 2 chicken sausages vertically, place them in the hot grill pan, sprinkle salt and crushed black peppercorns and grill for 1 minute on each side. Transfer them onto a plate.
  4. Halve 5-6 cherry tomatoes and transfer them into another plate. Sprinkle salt and crushed peppercorns and drizzle some olive oil. 
  5. Chop coriander leaves, add some to the tomatoes and mix well. 
  6. Heat 2 teaspoons butter in another non-stick pan, add the egg mixture and cook stirring continuously. Half way through add 2 tablespoons grated cheese, cook stirring for 1-2 minutes. Add crushed peppercorns and mix lightly and cook for 1 minute.
  7. Halve 1 poi.
  8. Arrange the sausages and cherry tomato mixture on one side of a serving plate. Keep the poi by the side of the tomatoes. Transfer the scrambled eggs in the remaining space and serve immediately.
