Ingredients
- 4 pois
- 12 eggs
- Salt to taste
- 1 cup milk
- 8 chicken sausages
- 8 teaspoons olive oil + for drizzling
- 20-24 cherry tomatoes
- Crushed black peppercorns to taste
- ¼ small bunch fresh coriander leaves
- 8 teaspoons butter
- 8 tablespoons grated mozzarella cheese
Method
- For each portion break 3 eggs into a bowl, add salt and ¼ cup milk and whisk well.
- Heat 2 teaspoons olive oil in a non-stick grill pan.
- Cut 2 chicken sausages vertically, place them in the hot grill pan, sprinkle salt and crushed black peppercorns and grill for 1 minute on each side. Transfer them onto a plate.
- Halve 5-6 cherry tomatoes and transfer them into another plate. Sprinkle salt and crushed peppercorns and drizzle some olive oil.
- Chop coriander leaves, add some to the tomatoes and mix well.
- Heat 2 teaspoons butter in another non-stick pan, add the egg mixture and cook stirring continuously. Half way through add 2 tablespoons grated cheese, cook stirring for 1-2 minutes. Add crushed peppercorns and mix lightly and cook for 1 minute.
- Halve 1 poi.
- Arrange the sausages and cherry tomato mixture on one side of a serving plate. Keep the poi by the side of the tomatoes. Transfer the scrambled eggs in the remaining space and serve immediately.
