Ingredients
·1½ cups chopped fresh fenugreek leaves (methi)
·2 medium onions (pyaz)
·Salt to taste
·½ tsp red chilli powder
·½ tsp cumin powder
·1 tsp coriander powder
·¼ tsp turmeric powder
·¼ tsp carom seeds (ajwain)
·2 tsps rice flour
·¾ cup gram flour (besan)
·Oil for deep frying
·Green chutney to serve
Method
1.Take fenugreek leaves in a large bowl, add salt and mix well. Set aside for 10-15 minutes.
2.Finely chop onions.
3.Squeeze excess water from the fenugreek leaves through a muslin cloth. Discard the water and put the leaves into a large bowl. Add onions, red chilli powder, cumin powder, coriander powder, turmeric powder, salt, carom seeds, rice flour and gram flour and mix well.
4.Heat sufficient oil in a kadai. Gently slide in small portions of the mixture into the hot oil and deep fry till golden brown and crisp. Drain on absorbent paper.
5.Arrange the pakode on a serving platter and serve hot with green chutney.
