Ingredients
· 1½ cups chopped fresh fenugreek leaves (methi)
· 2 medium onions (pyaz)
· Salt to taste
· ½ tsp red chilli powder
· ½ tsp cumin powder
· 1 tsp coriander powder
· ¼ tsp turmeric powder
· ¼ tsp carom seeds (ajwain)
· 2 tsps rice flour
· ¾ cup gram flour (besan)
· Oil for deep frying
· Green chutney to serve
Method
1. Take fenugreek leaves in a large bowl, add salt and mix well. Set aside for 10-15 minutes.
2. Finely chop onions.
3. Squeeze excess water from the fenugreek leaves through a muslin cloth. Discard the water and put the leaves into a large bowl. Add onions, red chilli powder, cumin powder, coriander powder, turmeric powder, salt, carom seeds, rice flour and gram flour and mix well.
4. Heat sufficient oil in a kadai. Gently slide in small portions of the mixture into the hot oil and deep fry till golden brown and crisp. Drain on absorbent paper.
5. Arrange the pakode on a serving platter and serve hot with green chutney.
