Ingredients
- 1 tablespoon matcha powder
- 1 ripe mango, peeled and cut into cubes
- 3 eggs
- ¼ cup castor sugar
- A pinch of salt
- 1⅛ cups refined flour (maida)
- 1¾ cups milk
- ¼ cup melted butter + for greasing
- Vanilla ice cream to serve
- Fresh mint sprigs for garnish
Method
- Break eggs into a bowl, add castor sugar and salt and whisk well.
- Sift refined flour and matcha powder and whisk till well combined. Add milk little by little and continue to whisk to make a smooth batter. Add melted butter and mix well. Strain this batter into a bowl.
- Heat a non-stick shallow pan and grease with some melted butter. Pour a ladleful of batter and swirl the pan to a thin disc Cook for 1-2 minutes. Flip and cook the other side for 1 minute. Fold the crepe into a triangle and place on a serving plate. Make more crepes similarly.
- Place some mango cubes and scoops of vanilla ice cream on the side. Garnish with mint sprigs and serve.
