Matcha Crepes With Mangoes

A dessert that has a cooked element and is a tricolour riot on a plate. Matcha-flavoured crepes served with cubed mangoes and vanilla ice-cream a treat to behold and also to eat.

Ingredients

  • 1 tablespoon matcha powder
  • 1 ripe mango, peeled and cut into cubes
  • 3 eggs
  • ¼ cup castor sugar
  • A pinch of salt
  • 1⅛ cups refined flour (maida) 
  • 1¾ cups milk
  • ¼ cup melted butter + for greasing
  • Vanilla ice cream to serve
  • Fresh mint sprigs for garnish 

Method

  1. Break eggs into a bowl, add castor sugar and salt and whisk well.
  2. Sift refined flour and matcha powder and whisk till well combined. Add milk little by little and continue to whisk to make a smooth batter.  Add melted butter and mix well. Strain this batter into a bowl.
  3. Heat a non-stick shallow pan and grease with some melted butter. Pour a ladleful of batter and swirl the pan to a thin disc Cook for 1-2 minutes. Flip and cook the other side for 1 minute. Fold the crepe into a triangle and place on a serving plate. Make more crepes similarly.
  4. Place some mango cubes and scoops of vanilla ice cream on the side. Garnish with mint sprigs and serve.
