Ingredients
- 500 grams bottle gourd (lauki)
- ¼ cup flax seeds (alsi)
- 2-3 tablespoons mustard oil
- ¼ teaspoon asafoetida (hing)
- ¼ teaspoon turmeric powder
- Salt to taste
- 2-3 tablespoons chopped fresh coriander leaves
- ½ lemon
- Fresh coriander sprig for garnish
- Rotis for serving
Method
- Peel bottle gourd and cut into 1 inch cubes.
- Dry roast flax seeds in a non-stick pan, till they pop, transfer onto a plate and allow to cool.
- Transfer roasted flax seeds in mortar and finely pound it with a pestle.
- Heat mustard oil in a kadai till it smokes, reduce heat, add asafoetida and bottle gourd and sauté on high heat for 2-3 minutes. Add salt and turmeric powder and mix well. Cover and cook for 5-10 minutes.
- Add 2-3 tablespoons of powdered flax seeds and coriander leaves and mix well.
- Switch off heat, squeeze the juice of lemon and add to the mixture and mix well.
- Transfer into a serving bowl, garnish with coriander sprig and serve hot with rotis.
