Japanese Style Egg Sandwich

Method

  1. Heat sufficient water in a deep pan, gently slide in the eggs and bring the water to a boil. Once the water has come to a boil, cook the eggs for 8 minutes.
  2. Drain the eggs and soak in ice cold water for a few minutes. Drain them and peel the eggs. Roughly chop the eggs and transfer into a large bowl.
  3. Mash the eggs with a fork and add Japanese mayonnaise, castor sugar, black pepper powder and salt and mix till well combined. 
  4. Apply butter generously on one side of each bread slice. Spread a portion of the eggs mixture on 4 slices. Cover them with the remaining bread slices with the buttered side facing down. 
  5. Place the sandwiches on a plate, place another plate on it and press it lightly. Set aside for 5-10 minutes. 
  6. Trim the edges of the sandwiches, cut them vertically in half and arrange on a serving plate. Garnish with chives and serve.
