Ingredients
- 6 eggs
- ⅔ cup Japanese mayonnaise
- 8 white bread slices
- 3 teaspoons castor sugar
- Black pepper powder to taste
- Salt to taste
- Butter for applying
- A few 2 inch chive pieces for garnish
Method
- Heat sufficient water in a deep pan, gently slide in the eggs and bring the water to a boil. Once the water has come to a boil, cook the eggs for 8 minutes.
- Drain the eggs and soak in ice cold water for a few minutes. Drain them and peel the eggs. Roughly chop the eggs and transfer into a large bowl.
- Mash the eggs with a fork and add Japanese mayonnaise, castor sugar, black pepper powder and salt and mix till well combined.
- Apply butter generously on one side of each bread slice. Spread a portion of the eggs mixture on 4 slices. Cover them with the remaining bread slices with the buttered side facing down.
- Place the sandwiches on a plate, place another plate on it and press it lightly. Set aside for 5-10 minutes.
- Trim the edges of the sandwiches, cut them vertically in half and arrange on a serving plate. Garnish with chives and serve.
