Method

  1. Preheat oven to 180º C.
  2. Put ProV Premium Hazelnut and refined flour in a food processor and process to a fine powder.
  3. Take butter in a large bowl, add powdered sugar and whisk till well combined. Add vanilla essence and whisk well. Add the processed powder and mix till everything comes together and forms a dough.
  4. Take a portion of the dough on a parchment and cover it another parchment paper. Roll it into a rectangular sheet of medium thickness. Cut into roundels with a crinkle cookie cutter. Use up the remaining dough similarly. Arrange the shortbread cookies at equidistance on a baking tray.
  5. Place the baking tray in the preheated oven and bake for 8-10 minutes. 
  6. Bring the shortbread cookies out of the oven and allow to cool completely.
  7. Meanwhile to make ganache, heat fresh cream in a pan till it comes to a boil. Add dark chocolate, mix well and cook till it melts. Take the pan off the heat and allow to cool completely. 
  8. Pipe out a portion of the chocolate ganache over half the shortbread cookies and cover with the remaining ones to make sandwiches. 
  9. Arrange sandwiches on a serving plate and serve.
