Fruit Custard

How can you say no to this delicious, creamy, fruity custard!! And why would anyone when this dessert has healthy fruits and a creamy custard!!

Ingredients

  • Chopped assorted fruits (apples, kiwi, banana, black grapes, oranges) to serve
  • 4 tablespoons sugar
  • 1 tablespoon corn flour
  • 2 tablespoons milk powder
  • ¼ teaspoon edible yellow food colour, mixed with 1 tablespoon water 
  • 1 teaspoon vanilla essence
  • 2 cups milk
  • Fresh pomegranate pearls for garnish
  • Fresh mint sprigs for garnish

Method

  1. To make the custard mixture, put 2 tablespoons sugar in a mixer jar, add corn flour, milk powder, edible yellow food colour and vanilla essence and grind to a fine mixture.
  2. Pour milk in a pan, add 1 tablespoon prepared custard mixture and whisk till well combined. Place the pan on heat and continue to whisk and cook for 5-7 minutes or till the mixture thickens. Add remaining sugar and mix well till it dissolves. Set aside to cool completely. 
  3. Pour the custard into individual serving bowls, add a portion of the assorted fruits in each bowl and serve garnished with pomegranate pearls and mint sprigs.
