Double Loaded Chicken Sandwich

These sandwiches are stuffed with boiled and shredded chicken mixed with a flavourful ingredients, chicken salamis and cheese slices making them not only delicious but wholesome too.

Ingredients

  • 2 cups boiled and shredded chicken
  • 12 chicken salamis
  • ¼ cup cream cheese
  • ¼ cup mayonnaise
  • 1 tablespoon Dijon mustard paste
  • Crushed black peppercorns to taste
  • Salt to taste
  • 2 tablespoons chopped spring onion greens
  • 2 spring onion bulbs, chopped
  • 2 tablespoons finely chopped dried cranberries 
  • 2 tablespoons chopped fresh parsley leaves
  • Butter for applying
  • Orange marmalade for applying
  • 4 cheese slices
  • Hot sauce for serving
  • Salad for serving

Method

  1. Take cream cheese in large bowl, add mayonnaise, Dijon mustard paste, crushed black peppercorns, salt, spring onion greens, spring onions bulbs and cranberries and mix well.
  2. Add boiled and shredded chicken and mix till well combined. Add fresh parsley and mix well.
  3. Apply butter on one side of each bread slice and apply a little orange marmalade over the butter.
  4. Spread a generous portion of chicken mixture on 4 bread slices, place 3 pieces of chicken salamis on over the chicken mixture on each bread slice, place 1 cheese slice on top and cover with the remaining bread slices.
  5. Heat a non-stick tawa, apply butter on top side of each sandwich and place it on the hot tawa with the butter side facing down and cook on medium heat for 2-3 minutes.
  6. Apply butter on the other side, flip and cook on medium heat for 2-3 minutes.  
  7. Halve each sandwich diagonally and arrange on a serving plate. Serve with hot sauce and salad.
