Ingredients
- 4 tablespoons grated dark chocolate
- 2 tablespoons cocoa powder
- 4 eggs
- ¼ cup + 2 tablespoons castor sugar
- ½ cup milk
- 1 teaspoon vanilla essence
- ½ cup cream cheese
- 8 white bread slices
- 8 teaspoons butter
- Icing sugar for dusting
- Fresh mixed berries to serve
- Fresh mint sprigs for garnish
Method
- Take cocoa powder in a wide bowl, add castor sugar and mix well. Add milk and whisk till a smooth mixture is formed.
- Break in the eggs and add vanilla essence and whisk till well combined.
- To make the cheese spread, take cream cheese in a bowl, add castor sugar and mix till light and fluffy.
- To make the sandwiches, spread some cheese spread on all the bread slices. Sprinkle 1 tablespoon grated dark chocolate on 4 bread slices and cover with the remaining 4 bread slices to make sandwiches.
- Dip the sandwiches, one at a time, into the egg mixture till well coated with the mixture.
- Heat 2 teaspoons butter in a non-stick shallow pan. Place one sandwich and cook on medium heat for 2-3 minutes. Flip and cook the other side for 2-3 minutes as well. Similarly cook the remaining sandwiches.
- Transfer them onto a worktop, halve them diagonally and place on a serving plate. Dust icing sugar on top, garnish with mint sprig and serve with mixed berries.
