Ingredients

  • 4 tablespoons grated dark chocolate
  • 2 tablespoons cocoa powder
  • 4 eggs
  • ¼ cup + 2 tablespoons castor sugar
  • ½ cup milk
  • 1 teaspoon vanilla essence
  • ½ cup cream cheese
  • 8 white bread slices
  • 8 teaspoons butter
  • Icing sugar for dusting
  • Fresh mixed berries to serve
  • Fresh mint sprigs for garnish

Method

  1. Take cocoa powder in a wide bowl, add castor sugar and mix well. Add milk and whisk till a smooth mixture is formed.
  2. Break in the eggs and add vanilla essence and whisk till well combined.
  3. To make the cheese spread, take cream cheese in a bowl, add castor sugar and mix till light and fluffy.
  4. To make the sandwiches, spread some cheese spread on all the bread slices. Sprinkle 1 tablespoon grated dark chocolate on 4 bread slices and cover with the remaining 4 bread slices to make sandwiches.
  5. Dip the sandwiches, one at a time, into the egg mixture till well coated with the mixture.
  6. Heat 2 teaspoons butter in a non-stick shallow pan. Place one sandwich and cook on medium heat for 2-3 minutes. Flip and cook the other side for 2-3 minutes as well. Similarly cook the remaining sandwiches.
  7. Transfer them onto a worktop, halve them diagonally and place on a serving plate. Dust icing sugar on top, garnish with mint sprig and serve with mixed berries.
