Ingredients
- 4 green chillies
- 1 cup grated mozzarella cheese
- 4 brown bread slices
- ¼ red capsicum
- ¼ green capsicum
- ¼ yellow capsicum
- 4-5 fresh parsley sprigs
- Crushed black peppercorns to taste
- Salt to taste
- ½ teaspoon red chilli flakes
- 1 teaspoon butter + for applying
Method
- Chop green chillies finely and transfer into a bowl. Chop red capsicum, green capsicum and yellow capsicum finely and transfer into the same bowl.
- Chop parsley and transfer into the same bowl. Add mozzarella cheese, crushed black peppercorns, salt, red chilli flakes and 1 teaspoon butter and mix well.
- Apply butter on both sides of all bread slices.
- Heat a shallow non-stick pan, place the slices and toast till one side is crisp.
- Place them on the worktop, non-toasted side facing upward. Spread the cheese mixture evenly. Place in the same pan, cover with a lid and cook till the cheese melts and the underside of the bread is crisp.
- Cut into triangles, place them on individual serving plates and serve hot.
