Chicken With Bamboo Shoot

Ingredients

  • 750 grams chicken, cut into 2 inch pieces on the bone
  • 100 grams tinned bamboo shoots
  • 2-3 tablespoons mustard oil
  • 1 large onion, sliced
  • 1 tablespoon crushed dried red chilli-garlic
  • 1 medium tomato, chopped
  • 1 dried bhoot jolokia chilli, broken into pieces
  • Salt to taste
  • Fresh coriander sprig for garnish

Method

  1. Thickly slice the bamboo shoots.
  2. Heat mustard oil in a deep-pan till it begins to smoke. Cool slightly, add onion and sauté till onion turns golden brown.
  3. Add crushed red chilli-garlic mixture, mix and sauté for 1 minute. Add tomato, mix and cook till pulpy.
  4. Add chicken, mix and sear on high heat for 4-5 minutes.
  5. Add 1½ cups water, bhoot jolokia chilli, salt and bamboo shoots and mix well. Cover and cook on medium heat for 8-10 minutes
  6. Transfer into a serving vessel, garnish with coriander sprig and serve hot.
