Ingredients
- 750 grams chicken, cut into 2 inch pieces on the bone
- 100 grams tinned bamboo shoots
- 2-3 tablespoons mustard oil
- 1 large onion, sliced
- 1 tablespoon crushed dried red chilli-garlic
- 1 medium tomato, chopped
- 1 dried bhoot jolokia chilli, broken into pieces
- Salt to taste
- Fresh coriander sprig for garnish
Method
- Thickly slice the bamboo shoots.
- Heat mustard oil in a deep-pan till it begins to smoke. Cool slightly, add onion and sauté till onion turns golden brown.
- Add crushed red chilli-garlic mixture, mix and sauté for 1 minute. Add tomato, mix and cook till pulpy.
- Add chicken, mix and sear on high heat for 4-5 minutes.
- Add 1½ cups water, bhoot jolokia chilli, salt and bamboo shoots and mix well. Cover and cook on medium heat for 8-10 minutes
- Transfer into a serving vessel, garnish with coriander sprig and serve hot.
