Chicken And Egg Crostini

There's a lot of flavour packed in this little appetizer. A delicious chicken mixture on bite-sized crostini is a fabulous pass-around food with Italian red wine!

Ingredients

  • 1 cup boiled and shredded chicken
  • Boiled egg slices for garnish
  • ½ garlic bread
  • Butter for toasting
  • ½ cup cream cheese
  • 2-3 tablespoons mayonnaise
  • 2 teaspoons mustard paste
  • A dash of lemon juice
  • Salt to taste
  • 1 tablespoon chopped pickled gherkins
  • Black pepper powder to taste
  • Arugula leaves as required
  • Smoked paprika for sprinkling
  • Edible flowers for garnish
  • Chives for garnish

Method

  1. Thickly slice garlic bread. 
  2. Heat a non-stick tawa, add butter, place the bread slices on it and toast for 2-3 minutes on medium heat. Apply butter on the upper surface, flip and cook on other side for 2-3 minutes more.
  3. Transfer boiled chicken into a food processor jar, add cream cheese, mayonnaise, mustard paste, lemon juice, salt, gherkins and black pepper powder and process to a fine paste.
  4. Transfer the ground mixture into a piping bag fitted with a star nozzle.
  5. Arrange the toasted bread slices on a serving platter, place a arugula leaf on each slice and pipe out a generous portion of the chicken on each slice.
  6. Arrange boiled egg slices on top, sprinkle smoked paprika, and garnish with edible flowers and chives and serve.
